Good morning, sunshine!

You have to admit... eating a plate of vibrant colors cannot help but bring a smile to your face.

Well, E.E. Cummings, we are half-way there... a laugh is often trailing closely behind a smile...

Grapefruit. Rich in vitamin C, high in antioxidants and protects again colon and kidney cancer. Grapefruit, or in French - Pamplemousse - not only exudes a brilliant pink pop of color, but is truly a natural medicine in healing the human body. Oranges and avocados? The same.

In preparation, first use your zester to zest about 1 tbsp of both the grapefruit and orange zest... then cut away both top and bottom of the grapefruit and orange (this will allow the fruits to have a base that does not roll). Carefully cut the peel... down to the vibrant flesh of the fruits. When cutting, be sure to remove all of the "white" skin... as this is where the bitter flavor from the peel exists. Then slice the fruits into slivers and toss with the zest, as well as juice of 1/2 lemon and if desired, some stevia/truvia. Add in some avocado slices to the brilliant party on a plate and sprinkle with pomegranate seeds... good to go!
