Jicama Slaw

Jicama.

Love the name. Always have. 

But would a jicama by any other name taste as crunchy?

Well... yes. But how does one enhance the refreshing vegetable?

Quick, healthy "slaw" alternative:

1 large fennel - chop into thin "matchsticks" (or "batons" in French)
1 granny smith apple - chop into thin "matchsticks" (or "batons" in French)
1/2 Jicama - chop into thin "matchsticks" (or "batons" in French)
4 large radishes - chop into thin "matchsticks" (or "batons" in French)
Juice of 1 lemon
Lemon zest - 1/2 lemon
Drizzle of Extra Virgin Olive Oil
Pinch of Himalayan sea salt
Pinch of cayenne pepper
Fresh basil leaves

Simply combine all ingredients all allow to marinate in the refrigerator for at least 30 minutes before serving.

I combined my fresh, healthy slaw with sautéed shrimp, 0% Greek yogurt sauce and final drizzle of Extra Virgin Olive Oil.

0% Greek Yogurt Sauce - I simply combined 1 cup 0% Greek yogurt, juice of 1/2 lemon, zest of 1/2 lemon, pinch of sea salt and cayenne, and freshly chopped cilantro.

Brilliant. Fresh. Colorful. Healthy.

And best part... easy to execute!
