Quick, healthy, patriotic and fresh kale salad

Patriotic... Happy 4th, America!!

Quick, healthy, patriotic and fresh kale salad:

1 Bunch Kale - remove ribs and chop into bite-sized pieces
Chopped carrots
Pomegranate seeds
Blueberries
Roasted Almonds
Fresh Cilantro
Lemon Juice
Pinch of cayenne pepper
Himalayan sea salt - to taste
Hemp seeds
Chia seeds
Extra Virgin Olive Oil

I tend to allow my kale to marinade in a mixture of lemon juice and extra-virgin olive oil for at least 2 hours before serving (even overnight!) Why? Since kale is unpalatable and bitter when consumed by its lonesome, it must be paired with two key ingredients. One - the acid in the lemon help to break the earthy, bitter-taste down. Two - the extra-virgin olive oil is absorbed into the kale leaves, permeating the greens with a softer, Mediterranean-flare. For a more patriotic and healthy twist, add chopped carrots, blueberries, pomegranate seeds, roasted almonds, cilantro, pinch of cayenne, hemp seeds, chia seeds and Himalayan sea salt.

Work with the sweet/savory flavors. You may also add strawberries, avocados and drizzle with balsamic vinegar.
