Sprout Salad - Revamp

Quick posting on revamping a "shoot/micro green/kale/sprout" salad. The aforementioned greens have a certain earthy/bitter bite when consumed solo. However, the health benefits of the greens are wonderful for one's body. What to do... My recommendation is to use fresh herbs, lemon juice, vegetables, beans and EVOO dressing to aid in eliminating the bitter aspect from the greens. I absolutely love cilantro... Which is a robust herb in and of itself... It can hold its flavor nicely without being overbearing... Basil or mint may also be added. Lemon juice will cut the bitter flavors due to the acid in the lemon... A simply squeeze of about 1/2 lemon will do the trick. Any type of raw vegetable may be an addition... Cherry tomatoes, carrots, asparagus, beets, radishes, broccoli/cauliflower, zucchini, etc. beans and nuts will also elevate the flavors... Garbanzo beans, roasted pine nuts, almonds, walnuts, etc. spend the few extra dollars in purchasing a flavorful extra virgin olive oil. A light drizzle will brighten the dish by introducing a sweet, fruity, olive element (think more Mediterranean). A sprinkle of feta cheese would be a nice addition as well!
