Absolutely adore my new Vitamix from Sur la Table!! I sweated shallots in almond oil, then added portabella mushrooms and tomatillos... Allowed to cook until tender, then added raw lentils and covered with chicken stock. The stock was brought to a boil, then medium simmer to cook until soft to the bite (about 30min). Seasoned with smoked sea salt, smokey paprika and dried Italian herbs. I then added the cooked lentil mixture to the vitamix and gave it a whirl! When finished, my soup was perfectly seasoned and warmed. Garnishes with baked blue corn tortilla chips, feta cheese scallions and 0% fat Greek yogurt (LOVE the yogurt in soups... Makes it creamy!!). And of course... Love!
