Chilled cucumber, avocado, jicama and apple soup

One of the many benefits of owning a Vitamix/juicer? Before produce spoils, simply create a splendid soup or juice. Cost effective, healthy and delicious.

Chilled cucumber, avocado, jicama and apple soup

1 lb Organic cucumbers
2 small avocados
1 pink lady apple
1 medium jicama
1 shallot or 1/2 medium sweet onion
2 cups arugula
1/4 c. lemon juice
3/4 c chicken stock
1 tsp smoked sea salt
1 tsp cayenne pepper
1 tsp cajun seasoning
1 tsp oregano
1 bunch cilantro and more for garnish

With a wide-set peeler, remove one cucumber and peel away long, thin "noodles." This will act as the soup garnish. With the remaining ingredient, simply blend together until smooth. Chill in the refrigerator for at least one hour before serving.

An excellent addition to the soup? Instead of heavy cream or sour cream, opt for 0% Greek Yogurt:

2 cups 0% Greek Yogurt
2 tsp salt
1 tsp cayenne pepper
1/4 cup lemon juice
1 bunch cilantro

Simply chop the cilantro, then mix with the other ingredients. Again, chill before serving.

As far as presentation - since it is a chilled soup, be creative with the choice of serving-method. A martini glass can be whimsical and elegant. Simply pour the soup into the bottom 1/2 of the glass, then top off with the Greek yogurt combination. For garnish, top with the "cucumber noodles" and micro-greens. A drizzle of white truffle oil would be a brilliant addition to provide a more "earthy" flavor to the nutty/slightly sweet combination. You will be sure to be smiling and experiencing the benefits of juicing/blending upon consumption.
