Whether losing or gaining weight, healthy eating is an essential component to overall energy, health and and well-being.
As far as food... what works for one person will not necessarily work for another. Each of us are created in a unique, beautiful way... all shapes and sizes.
Be that as it may, one common element: everyone has to eat... why not create beautiful, nutritious meals?
Kale is one of the most healthy greens that we as humans can consume. You know, the decorative plant that often is tossed onto buffet displays? Kale often gets a "bad rap," as it can be unpalatable and bitter when eaten alone. In order to soften kale, I will remove the rib, then actually massage the leaves with the hands for about a minute. Toss into a large bowl, then sprinkle with lemon juice and olive oil. By massaging olive oil and lemon juice into the kale, the bitter leaves begin to "break down" and soften. I left my leaves over the night in the refrigerator... the name day, the acid from the lemon juice aided in "cooking" the leaves - leaving them tender and flavorful. A quick, healthy salad? Kale leaves (marinated in olive oil and lemon juice), tossed with freshly crushed sea salt, blood orange supremes, thinly peeled parsnips, avocado, balsamic, cilantro and sprinkle of cayenne pepper.
